Dr. Jie Zheng

Dr. Jie Zheng is an Associate Professor in Department of Food Science and Engineering, Jinan University, China. She completed her Ph.D. degree in 2013 from Department of Biochemistry, University of Turku, Finland. Dr. Zheng has published more than 40 research papers, two book chapters and 3 patents, and served as reviewer for several peer-reviewed journals. Her research interest focuses on the variation and underlying mechanisms of food components during preharvest and postharvest processing; the formation of endogenous contaminants during the thermal processing of food, and their interaction with food ingredients; the safety and its control of thermally processed foods.
